Heart Pressed Release Party!

Heart Pressed by Melissa Wardwell: Release Party with cookies!!

I love cookies. It’s a well-known fact around our house. Low carb white chocolate macadamia nut cookies.
Keto friends!
Low carb friends too!
And anyone else who’s interested.
Y’all!
I had to make a recipe. I’ve baked many, many keto cookies and this recipe I created is by far my favorite.
I can’t make big batches of cookies. Well, I can, but then I eat them all because…(eh, you don’t want that long of a story). Needless to say, I have to make cookies in small batches. This makes 8 small cookies.

Recipe!


1/2 cup almond flour
1/2 tsp gelatin powder (makes cookies chewy. Can be left out.)
1 egg
3TBSP butter (room temperature! Do not heat it in the microwave. It’ll throw everything off.)
1 TBSP Pyure (if you use a different sweetener, you will need to adjust amount. Pyure is twice as sweet as most others)
1/2 tsp vanilla extract
1/4 cup Lily’s sugar free white chocolate chips
1/4 cup chopped macadamia nuts

Preheat oven to 350°
Mix almond flour, gelatin, egg, butter, Pyure, and vanilla.
Batter will be thick! To the point you’re going to think you’re doing something wrong and be tempted to throw in some extra liquid. Resist the urge!
Once batter is well combined, add white chocolate chips and macadamia nuts.
Stir some more.
Spoon onto parchment paper or cooking mat lined cookie sheet.
Bake for 10 minutes, or until done.
Note!!
This type of white chocolate chip melts to almost nothing in the oven. Do not despair. It turns into the most delicious, gooey caramel consistency.
If you’re desperate for actual chips to remain in the cookie, add a few on top of the cookies about 8 minutes into the baking process.
Let them cool, if you can.
They’re even better the next day.
